You can find the following:
The right-hand rule establishes the X-_Y_-_Z_ sequence and rotation of the coordinate axes used to calculate the vehicle dynamics. The Vehicle Dynamics Blockset 3D simulation environment uses these right-handed (RH) Cartesian coordinate systems defined in the SAE J670<https://de.mathworks.com/help/vdynblks/ug/coordinate-systems-in-vehicle-dynamics-blockset.html#mw_670a15dc-8cb4-4f63-90f1-7b6b33632837 [2]> and ISO 8855<https://de.mathworks.com/help/vdynblks/ug/coordinate-systems-in-vehicle-dynamics-blockset.html#mw_99db286e-ed1d-457c-8065-1ab3611f8338 [3]> standards:
  • Earth-fixed (inertial)
  • Vehicle
  • Tire
  • Wheel
The coordinate systems can have either orientation:
  • Z-down — Defined in SAE J670<https://de.mathworks.com/help/vdynblks/ug/coordinate-systems-in-vehicle-dynamics-blockset.html#mw_670a15dc-8cb4-4f63-90f1-7b6b33632837 [2]>
  • Z-up — Defined in SAE J670<https://de.mathworks.com/help/vdynblks/ug/coordinate-systems-in-vehicle-dynamics-blockset.html#mw_670a15dc-8cb4-4f63-90f1-7b6b33632837 [2]> and ISO 8855<https://de.mathworks.com/help/vdynblks/ug/coordinate-systems-in-vehicle-dynamics-blockset.html#mw_99db286e-ed1d-457c-8065-1ab3611f8338 [3]>
How to change the direction for Z in the blocks?

In regard of the Z-up/down, presently only the SAE Z-down is supported. These can be converted to ISO using standard transformation matrix operations.
The feature to switch in between these different standards will be maybe implemented in a future release.
