With the latest version of Matlab there is no difference, hold all will be removed in the futur

The new graphics system in R2014b removed the function of "hold on" and replaced it with the previous functionality of "hold all" which kept the previous lines and added with new colours. Admittedly the old syntax was misleading, but there is no direct replacement of the old command - it is easiest to explicitly state yourself what colour and linestyle you want in order to continue plotting with the last colour and linestyle. Still in R2016a the command line help is wrong - it seems to refer to the R2014a behaviour

hold Hold current graph
hold ON holds the current plot and all axis properties, including
the current color and linestyle, so that subsequent graphing commands
add to the existing graph without resetting the color and linestyle.|
