What happens to my student license when my undergraduate degree ends?

I have a student license (Matlab), and my undergraduate degree ends in a year.
What happens if I renew my license for another 2-3 years?
I say this because I will lose access to my college email, where my student license is linked.

Student licenses (ones that you purchase) are not tied to university emails: you can change your email for your MATLAB Central account to continue to have access to the license.
Student licenses, however, are only considered valid during times you are registered with an appropriate degree-granting institution. If, for example, you finished an undergraduate degree, and then two years later went back for a Master's, then you would be eligible to resume using your MATLAB Student license.
The kinds of license that are linked to university email addresses are Academic licenses -- in particular Campus-Wide licences (previously called Total Academic Headcount licenses.) Those are licenses paid for by the academic institution, rather than purchased by the student.
In some cases when you graduate from a university, you become eligible for an "alumni" email address with the academic institution; those email addresses probably do not allow you to use Campus-Wide licenses, but you do not necessarily lose all email accounts with the academic institution (but in such a case you would need to change the email address on your MATLAB Central account before you lose access to the student email address.) Whether alumni email addresses are available is up to the university.

As long as you have access to your college email, you may be in luck to keep using your academic license, depending on the policy of your school, but that's probably not a viable long term option.
As others have noted, getting Home license is probably the most economical option assuming you plan to use MATLAB regularly. If your use will be more limited, you can go with MATLAB Online as well, but you will need MATLAB Home license if you plan to use MATLAB more than 20 hours a month.

You can get a "Home" license if you just want it for yourself for hobbyist purposes. Otherwise hopefully the company you go to work for will buy you a professional license.
