If you go to the end of this page and click on Trust Center, you can download the VPAT for MATLAB, Simulink, MATLAB Online, and/or MATLAB Grader in the Accessibility section of Trust Center.

The Trust Center also states "Additional security and privacy documents are available upon request: SOC 2, HECVAT, Data Processing Agreement, and GDPR subprocessor list. To request one of these documents, please contact Customer Support."
