Plot a surface through given points

Hello, I was wondering if it is possible to create a surface which interpolates a set of points. For example, let's say that I have the coordinates of a set of points on a surface from experimental data, is it possible to reproduce the surface with a plot?

The scatteredInterpolant function create the interpolation of the points, but it does not plot the surface. Is it possible to plot the surface directly with the scatteredInterpolant function?

No.
You feed a grid of points to the function handle returned by scatteredInterpolant and that will return data that you can plot. There is an example at http://www.mathworks.com/help/matlab/ref/scatteredinterpolant-class.html#examples
