How can I plot a surface (plate) from X,Y,Z data that looks like this:

The ‘X’ and ‘Y’ matrices (and you will need to define them as matrices) you can create with the meshgrid function. Then use surf or mesh (and their friends surfc and meshc) or contour and its friends to create the sort of 3D plot you want.
