They are used in any area they provide a useful way of visualising information.

gives an example of usage. It isn't hard to think of other scenarios in which they would be used. But why do you need to know. Clearly you don't find them useful for what you are doing, otherwise you wouldn't be asking. There is a vast swathe of functions and tools in Matlab I don't know the application of. I just ignore them if they aren't useful to me!
