Bind keys to shorcuts

Hi,
Is it possible to bind keys to shortcuts i.e windows key + z would launch my shortcut?
Alternatively, is it possible to bind a command to the shortcut so I could type into the command window 'z' then enter on the keyboard and my shortcut would run?
Or am I left with just clicking with the shorcut thats in the quick access menu

A number of built-in actions can have shortcuts assigned; see https://www.mathworks.com/help/matlab/matlab_env/keyboard-shortcuts.html
Defining arbitrary actions or even sequences of built-in actions is more difficult.
