Gridding satellite data in Matlab

I having longitude, latitude and vector (data). I want to grid the data. I have written my own code using find command but it was very slow. Used griddata also but smoothness is not there.
I have run for huge data. Can anyone help me with best function for this

If you have downloaded the Satellite Data, then you Data is already in gridded format.
Please provide the dimension of latitude, longitude and data, so that we can help you in a better way.

I have 3 column data 1. longitude 2. latitude 3. data(Temperature)
I want to grid this data
