3D mesh plot with colour

Hi

I have some L*, a*, b* data. Sample data look like something below.

Can I possibly do a 3D colour plot with these data like something like this (shown below)?

The thing that I don't quite understand is that to use meshgrid and then surf. It looks like there needs to be an equation but here L a and b are independent values. L is not a function of a and b. So it seems like using meshgrid then surf is not right? Am I thinking wrongly?

Can someone help please?
