I'd use daspect to change the aspect ratio of your axes:

% Create plot vectors
x = [0, 1, 2];
y = [1, 0, 0];

% Plot
plot(x,y);

% Change plot aspect ratio so 1 unit of x equals 2 units of y (and z)
daspect([1,2,2])
