scatteredInterpolant for 2D LON/LAT array

Hello all,
Long time reader, first time writer here. I'd like to use scatteredInterpolant to interpolate heights to specific LON/LAT locations using the natural neighbours method. My input files are a 2D LON array (class single,size 78x126), a 2D LAT array (class single, size 78x126), a 2D HEIGHT array (class single, size 78x126), a vector LONSTN (class single, size 1x79) and a vector LATSTN (class single, size 1x79). I expect the output to be HGTSTN, the interpolated height at the locations of interest (size 1x79).
I'm not really sure scatteredInterpolant is the correct tool to achieve this, but any help is greatly appreciated.

Seems right to me. Most other methods require some kind of grid, but the draws in your dataset seem random.
