Implementing estimators: Least square, maximum likeli-hood

How can I achieve like the process in these blocks. I have no knowlegde about matlab :( any suggestion for me to complete this. I do not understand how can I pass the value to C matrix. I have to do something regarding to simulink to just coding to achieve this? I dont know where to start.
