but dimension is not reduced to 2 dimension matrix

Why would it be reduced to a 2 dimensional matrix? You are just reading in the file and writing out the same content again, to the same kind of file.

Are you hoping to change the image into pseudocolor? If so then you cannot do that with JPEG files, as JPEG does not support pseudocolor.
